Quinoa or quinoa is a small yellow seed from a native plant of the Andes. Due to its exclusive nutritional characteristics, it is super important that it is part of a regular diet.

Quinoa contains almost 16% protein, more than other grains, omega 3 and omega 6, calcium, iron, potassium, phosphorus, magnesium and zinc.
It is the only plant food that has all the essential amino acids, including: tryptophan, isoleucine, methionine, phenylalanine, threonine, valine, leucine and lysine, the latter being the most important.

• Thanks to the lysine contained in quinoa, it improves immune and gastric function. In addition, it helps the formation of antibodies, cell repair, and calcium absorption.
• Quinoa is made up of two phytoestrogens, daidzein and genistein, which help prevent osteoporosis.
• 6% of the total weight of the grain is fiber, which favors intestinal transit, reduces LDL cholesterol (or bad cholesterol) and raises HDL cholesterol (or good cholesterol).

• Quinoa is very good for celiac disease patients to manage gluten tolerance by improving bowel functions.

Currently you can find quinoa-based products such as flours, flakes and granola, which you can eat like any other cereal.
However, it has saponins, toxic substances for animals and humans with properties similar to those of soap, so it is very important to wash it well and several times with water and then boil it.
